Vanilla Processing

We boil the vanilla at 158 degrees for less than a minute

sweat the vanilla in boxes

We sweat the vanilla in boxes for three days.

We leave the vanilla indoors warmed in blankets.

We sun dry the vanilla in order to stabilize the vanillin content and humidity level.
